Roasted Red Pepper Dip w/ Roasted Garlic

This is one of my favorite dips and it is soooo good for you!!!!!

~Ingredients~

3 Roasted Red Peppers * 
1 Can of Chick Peas
1 Lemon ~ Juice & some zest
~~~~~~~~~~~
2 tsp. Olive Oil
3 Cloves of Roasted Garlic**



*Roasting Peppers:   Preheat Oven to 425. Slice the tips off the peppers and remove the stalk and insides.Then place upside down on a foil lined baking sheet. Bake for 20 minutes.
Remove from oven immediately and cover with foil for 20 minutes, so the peppers can steep...

While they are steeping...

Add the chick peas, lemon juice & Zest to the food processor...

After steeping for 20 minutes, immediately peel skins off of peppers ~CAUTION~ THEY WILL BE HOT, use a fork to help you, when they are peeled put them in food processor with the chick peas.                                        




  ...or you can buy a jar of roasted red peppers if you don't have the time for roasting!

Here is what the peppers look like after being roasted and peeled.







**Roasting Garlic: Preheat Oven to 400. 
Take the 3 garlic cloves, pressed and broken and 2 tsp. oil and place into small foil form created here:

Bake for 12 minutes, then add to the processor.

             Puree ALL together until smooth, serve with toasted pita bread or pita chips, ENJOY!!!

  1. I love this dish and have to make it real soon. I remember not being able to walk away from it for very long. Definitely a great dish to bring to a party!
